The Evolution of Barbecue
Barbecue today has become a meal that excites the gut of every average American. Many have grown to love the soft and slowly cooked meat under indirect burning flame but only a few know how this meat-eating tradition that has become widely accepted among Americans today evolved. Grilled barbecue today has become part of the American way of life, finding its way to planned road trips, TV shows as well as dishes like barbecue tacos.
American barbecue’s history can be traced back to the western outposts of Kansas City and Texas as well as the “barbecue belt” which also includes Carolina and Memphis. The history dates back to Spanish conquerors who introduced the Caribbean cooking method to settlers who migrated westwards and Europeans who introduced different flavors to the grilled barbecue.
The indigenous tribes that Christopher Columbus encountered on an island named Hispaniola were said to have developed a special method for cooking meat over an indirect flame by using wet freshly cut wood to prevent the food and wood from burning. It was reported that the Spanish referred to this new cooking style as barbacoa; which is the original source of the word barbecue.
The Spanish explorers who accompanied Christopher Columbus advanced their expeditions towards the north and they were said to be the ones that later introduced this cooking style to the northern parts. History has it that in 1540 the Chicksaw tribe found around the present-day Tupelo, Mississippi prepared a feast of pork using the barbacoa in the presence of explorer Hernando de Soto.
The southerners often used pork because it was less costly to keep pigs while the northerners usually use beef or mutton. Later on, immigrants from Africa and Europe who were slaves introduced different spices and flavors that were not native to Americans.
